Overview:
The breading consists of three parts: flour, egg batter and seasoned bread crumbs.
As Ming Tsai points out in the cooking series Simply Ming, the flour makes the egg stick,
and the egg makes the bread crumbs stick.
This breading is good for breaded shrimp, crabcakes, fish and various meats.
In particular, the amounts listed here are good for eight shrimp or four 1 oz. crabcakes.
Simply adjust the amounts of the ingredients to suit whatever you are preparing.
Instructions:
Step 1: Initial preparation
Place 1/4 cup of flour into one dish.
In a second dish, beat one egg with, optionally, a small amount of oil.
In a third dish place 1/4 cup of seasoned bread crumbs or panko.
If the items are to be baked right away, then lightly oil the baking dish.
Step 2: Dredging
Dredge the items in the flour, covering thoroughly.
If the items are small enough, they can be left in the dish with the flour.
Dip the items in the egg batter, covering thoroughly, and dredge them in the bread crumbs
or panko, again covering thoroughly.
