Instructions:

Step 1: Initial preparation
Prepare mayonnaise as per the mayonnaise recipe.
Add 4 oz. of crab meat, preferably backfin crab meat, to the mayonnaise.
Gently mix thoroughly, and divide into halves.
Divide each half again to yield quarters.
By hand, form into patties.

Step 2: Breading
Dredge the crabcakes in flour, egg batter and bread crumbs.

Step 3: Baking
Bake uncovered for approximately 20 - 25 minutes, at 425 degrees,
until golden brown.
